Craving Fried Chicken

I can’t remember the last time I had fried chicken….omgosh

As I was cooking, I had some crushed garlic left on my hand, so I offered it to Java. Java NEVER gets to eat people food, so she usually devours anything I offer her without thinking twice about it.

But she physically backed away from the garlic and did the “ew” face.

MY DOG IS A VAMPIRE.

So, there’s not an Indian food place around here anywhere. And I really miss it. So even though I didn’t have the ingredients to make any kind of actual Indian dish…I decided to throw together what I had to make my own concoction.

AND IT’S LIKE HEAVEN IN MY MOUTH

Store-bought vegetable curry, grilled (George Foreman style) chicken with my own random blend of Indian spices that were on hand (top picture), and Jasmine rice. Sooooo good.

I almost have 14 pages

So I’m going to reward myself by going to get some cookout.

Since I haven’t eaten anything but twizzlers and chips in the past 24 hours….

My dinner :)
Recipe:
Zatarain’s Yellow Rice (1/2 box)
1-2 thinly sliced, boneless/skinless chicken breasts
1/6 medium yellow onion, diced
1/6 red pepper, diced
two handfuls tomato basil almond accents
McCormick Perfect Pinch: Cajun flavor and Caribbean Jerk flavor
Olive oil
Teriyaki sauce
(everything can be adjusted to taste)
1) Prepare rice according to box instructions (it can be simmering while you do the rest)
2) Chop up chicken breasts, onions, and peppers.
3) Coat small skillet in olive oil. Add chicken and a few splashes of teriyaki sauce (don’t drench) and begin cooking on medium heat.
4) After one side of the chicken has begun to brown, add in onions, peppers, and seasonings and mix it up — continue cooking until chicken is almost done.
5) Crumble almonds in your hand and add them to pan — finish cooking chicken through.
6) Once rice and chicken are both finished, let them cool a little, and mix them together in a bowl and enjoy!
